I have a major sweet tooth. Going sugar free is a real challenge for me. This tasty banana “ice cream” hits the spot. It has only three ingredients and is super simple to make. Really you just need frozen banana. I added peanut butter for flavor, which might be my favorite add-in for banana ice cream. Cocoa powder and almond butter are great too. I added coconut milk to make it easier to blend in my not-so-powerful mini food processor. If you have a powerful blender, you probably won’t even need the milk. This couldn’t be any easier or healthier given how indulgent it tastes. We regularly end up with over-ripe bananas. I’ve made a habit of slicing them and freezing to use for this recipe and for no-guilt peanut butter fudge. I recommend slicing the banana and putting it in a single layer on a plate to freeze. Once frozen, transfer the slices to a freezer bag. Freezing in a single layer prevents them from sticking together. Do you have any tips for using up over-ripe bananas? Share in the comments! Recipe by Destination Belly Serves 1 Ingredients 1 banana, sliced and frozen 1 tablespoon peanut butter 1 tablespoon milk (optional- it will make it easier to blend but will result in runnier consistency. I used coconut milk but other kinds will be fine.) Instructions Add banana and peanut butter to a food processor or blender. Puree until the texture is even and smooth, stopping periodically to scrape the sides of the bowl with a rubber spatula. Add coconut milk if you’re having trouble getting it to blend. Serve immediately.
