Packing healthy food for a weekend getaway

We are healthy eaters, most of the time. Vacation is another story. When we went to the beach for a recent weekend getaway, I packed a ton of food to help us stay on track. I figured the more good food we had with us, the less tempted we’d be by the chips and cookies that usually figure heavily in our travels. Full disclosure: we still treated ourselves to one dinner out (mmmmmm shrimp po’ boy) and some chips while we were on the road. And I had an ice cream float one night- it’s the beach! I consider it a success, both the food and the trip overall. The key was bringing healthy foods we couldn’t resist.

Pulled pork is our go-to road trip main course. I LOVE this stuff. I always follow this simple slow cooker recipe for kalua pulled pork. It packs easily and can be eaten with forks or fingers. We both also love dips, so I purchased a few kinds we can’t resist, along with vegetables for dipping. And of course, it wouldn’t be vacation without dessert. I made sure to have some treats for myself in this department.
 
Below you’ll find a list of everything we brought. It was too much food, and some we didn’t even touch. But it was no trouble to pack- we only needed one large canvas grocery bag and an ice chest. I hope this list helps you stay healthy on your next road trip.

Food to pack for a weekend road trip getaway:

  3. Steamed asparagus with olive oil and lemon juice
  4. Dips
    1. Guacamole

  9. Coffee-related (so we can make good coffee right in our little room with only a microwave)

    4. Almond milk
  10. Supplies
    1. Paper plates
    2. Paper towels
    3. Plastic cutlery
